
I love experimenting with my foods to find out what new flavors can intrigue my tastebuds. When I make tacos for my older son, he doesn't like too many ingredients and he doesn't like spicy food very much (our boys are still kind of picky eaters), so I have to improvise sometimes when cooking for them. Tacos have always been a love of mine and since my diet has changed over the years, I had to make some changes to my favorite dishes. These tacos are made with canned jackfruit, red onions and fresh and frozen colored bell peppers (all chopped and seasoned) sauteed in sunflower oil, taco shells and sliced avocado.
