
My favorite simple and quick personal thing to make is chunky soup. At least half of my grocery shopping is in the produce aisle anyway, so I usually have some fresh veggies in my fridge and don't have to hurry up and get some from the store. I try to keep red onion, all colors of bell and/or sweet peppers, zucchini or some type of squash, leafy greens, and avocado at hand I sautee them with and without oil, depending on how I feel that day, and add fresh and dried herbs. Then I add either veggie stock or water to bring it to a boil and eventually simmer until I'm ready to eat. With my soups, I like to add chopped jalapeno, fresh lime juice and avocado slices. Good stuff!
