
Leafy greens are high in fiber, iron, magnesium, potassium and calcium. they have a wealth of antioxidants and help in blocking early stages of cancer. It's best not to cook them for too long or the nutrients will be cooked out of them. The greens shown above are a mix of kale and dandelion with chopped red onion and sweet peppers, sauteed with grapeseed oil and about 1 1/2 cup of veggie stock. The boys ate these up!
