
A bit of info I came across: In several West African countries, the word for "okra" is "kingombo," or "gombo" for short. Some benefits are that it is low in calories but high in fiber, contains nutrients like Vitamin C and folic acid, helps the immune system and improves digestion. I've loved okra since I was a child (my mom got me hooked!) and as I've gotten older, I've searched for different ways to cook it. As of lately, I like to stew it with sauteed onions, bell peppers and tomatoes with some dried herbs (like thyme and basil) and all-purpose spices.
